Layered Bean Dip

1 can refried beans

2 avocados

lemon juice

salt and pepper

1/2 to 1 pkg low-salt taco mix

8 oz sour cream or plain yogurt

grated cheddar or Monterey jack cheese

chopped tomato

sliced olives

scallions


Mush avocados together with a little lemon juice, salt and pepper. Mix sour cream or yogurt together with taco mix - try 1/2 pkg and add more if you like.

Using a 1-1/2 to 2 inch deep dish, layer beans, avocado mixture, sour cream mixture, grated cheese, chopped tomatoes, olives and scallions.

Serve with chips.
