Peanut Butter Pinwheels

1/2 cup brown sugar

1 egg

1/2 cup peanut butter

1 stick margarine

1/2 cup white sugar

1 cup flour (slightly rounded)

1/2 tsp. baking soda

1/4 tsp. vanilla

6 oz. (1 cup) chocolate chips


Mix together brown sugar, egg, peanut butter, margarine, white sugar until light and fluffy. Add flour, baking soda and vanilla. Spread out dough onto piece of wax paper. Be sure it is not too sticky or it will stick to wax paper. (Add a little more flour, if necessary).

Melt chocolate chips and spread over entire surface.

Roll up on wax paper and place in refrigerator 20 minutes. (half way through refrigeration, shape with hands so dough is more round instead of flat).

Remove wax paper. Slice thinly, place on cookie sheet. Bake at 350 for 8 minutes. Do not overcook - cookies shouldn't be brown. Better to undercook than overcook.
