Baked Halibut with Dijon and Lemon

Source: Barbara Pistrang

Halibut fillet or other fish of your choice, about 1 pound

Dried dill

Lemon slices

Make a paste with these ingredients:

2 T olive oil

2 large cloves of garlic, pressed

1 tsp Dijon mustard

1 tsp fresh lemon juice

½ tsp lemon zest

¼ tsp paprika

Salt and pepper to taste

Line a cookie sheet with parchment paper, cut to fit without going over the sides.

Place the halibut on the parchment paper. Spread the paste over the top of the fish and then sprinkle some dry dill on the top. Place a few lemon slices on top of the fish. Let stand, marinating, for 20-30 minutes, if you have time. Or just put it in the preheated oven.

Preheat oven to 425. Bake fish 10-12 minutes, then check to see if it is done. Bake a little longer, if needed.

Place fish under a broiler for 1 to 2 minutes.
