Pancakes

Source: Fanny Farmer Cookbook (by way of Brian Stewart)

Choose what size recipe you need. Melt butter, add to milk. Separate eggs, beat yolks lightly and add to milk mixture. Mix dry ingredients together. Combine liquid and dry ingredients, till just mixed and still lumpy. Beat egg whites until stiff but not dry. Fold egg whites lightly into batter. Cook over medium heat on ungreased pan or griddle.

Standard Recipe

1-1-/2 cups flour

3 T sugar

1-3/4 tsp baking powder

3 T melted butter

1-1/4 cups milk

2 eggs

salt (optional to taste)

1-1/2 T sugar

9/10 tsp baking powder

1-1/2 T melted butter

3/5 cup milk

1 egg

salt (optional to taste)

2-1/4 cups flour

4-1/2 T sugar

2-5/8 tsp baking powder

4-1/2 T melted butter

1-7/8 cups milk

3 eggs

salt (optional to taste)

Double Recipe

3 cups flour

6 T sugar

3-1/2 tsp baking powder

6 T melted butter

2-1/2 cups milk

4 eggs

salt (optional to taste)

Triple Recipe

4-1/2 cups flour

9 T sugar

5-1/4 tsp baking powder

9 T melted butter

3-3/4 cups milk

6 eggs

salt (optional to taste)
