Beth's Chocolate Sauce

9 ounces bittersweet chocolate (the better the quality, the better the sauce)

1 cup heavy cream

1 T cognac (optional)

Break chocolate into small pieces. Heat cream to boiling, remove from heat. Add chocolate pieces. Let sit for a minute. Stir until mixed.
