2 lbs. Idaho potatoes, peeled and quartered
5 T butter + 1 T butter
½ cup sour cream
3 large cloves garlic, finely minced
salt to taste
Boil potatoes, drain well. Mash. Add butter, sour cream, garlic and salt. Whip with electric beater. Let sit 1 hour. Spray casserole dish with cooking spray. Put potatoes in casserole. Dot top with 1 T butter.
Bake 15-20 minutes in preheated 350 oven.
