Oven Fried Cod

1-1/2 cups dry bread crumbs 

1/2 tsp. dry dill weed (or basil) 

1-1/2 lb. skinless cod fillet 

3 T melted butter (preferred) or vegetable oil 


Preheat oven to 400. Spray a baking sheet with cooking spray. Rinse fish and pat dry; cut into 4-6 pieces. Pour crumbs into a low bowl and mix with dill. Pour butter in another low bowl. Roll pieces of fish in butter, allow excess to drip off, then coat in crumbs to cover all sides. Arrange breaded pieces of cod on baking sheet with about 2 inches between pieces. Bake about 8-10 minutes until fish is opaque in center. Don’t overcook. Serves 4. 

Optional Lower-fat Substitution: Substitute 1 beaten egg white for the butter.
