Oven Fried Cod

1-1/2 cups dry bread crumbs
1/2 tsp. dry dill weed (or basil)
1-1/2 lb. skinless cod fillet
3 T vegetable oil
Preheat oven to 400. Pour crumbs into a plate and mix with dill. Rinse fish and pat dry; cut across in 2 inch strips. Pour oil in another plate. Roll pieces of fish in oil, allow excess to drip off, then coat in crumbs to cover all sides. Spray a baking sheet with cooking spray. Arrange breaded pieces of cod on baking sheet with about 2 inches between pieces. Bake about 8-10 minutes until fish is opaque in center. Don’t overcook. Serves 4.
Optional Substitution: Substitute 1 beaten egg white for the vegetable oil.
