Waffles

Decide how many waffles you want to make. Combine flour, baking powder, salt and sugar in a large bowl. Combine egg yolks, butter and milk. Make a whole in the center of the dry ingredients and pour in the wet ingredients. Combine with a few swift strokes - batter should have a pebbled look. Fold beaten egg whites into batter. Use waffle iron.


For 6 Waffles

1-3/4 cups flour

2 tsp. baking powder

1/2 tsp. salt

1 T sugar

3 egg yolks

6 T oil or melted butter

1-1/2 cups milk

3 egg whites, beaten stiff


For 8 Waffles

2-1/3 cups flour

3 tsp. baking powder

2/3 tsp. salt

1-1/3 T sugar

4 egg yolks

8 T oil or melted butter

2 cups milk

4 egg whites, beaten stiff


For 12 Waffles

3-1/2 cups flour

4 tsp. baking powder

1 tsp. salt

2 T sugar

6 egg yolks

12 T oil or melted butter

3 cups milk

6 egg whites, beaten stiff
