5 # potatoes, peeled and quartered
12 T butter
1-1/4 cup milk
salt and pepper to taste
5 T butter for topping (optional)
Boil potatoes, drain well. Mash. Add butter and milk and season with salt and pepper. Serve immediately, or place in oiled casserole dish and top with remaining 5 T of butter and bake for 15-20 minutes in a preheated 350 oven.
