Spiced Chicken and Peaches

1 chicken, cut up (about 3 pounds)

1/2 cup flour mixed with 1 tsp salt and 1/2 tsp pepper

cooking oil


Sauce: Mix all ingredients and cook slowly for 10 minutes (can be done ahead)

1 cup orange juice

1 and 1/2 cups sliced peaches, drained

2 T brown sugar

2 T vinegar

1 tsp. mace or nutmeg

1 tsp. basil

1 clove garlic, minced


Dredge chicken in seasoned flour and brown in oil. (can be done ahead) Remove chicken, pour off oil, save brown bits, if any. Place chicken in one layer in a pan and cover with sauce. Cover with aluminum foil. Bake at 350 for one hour. Remove foil and cook 20 to 30 minutes uncovered.
