Crab Cakes

This recipe makes enough crab cakes for 6 people.

1 lb crab meat, pulled apart

1 stalk celery, chopped

1/2 onion, chopped

2 T chopped parsley

1 tsp dry mustard

3/4 plain breadcrumbs (small grain)

3 eggs, beaten

1: Sauté onion, celery

2: Beat eggs in bowl.

3: Add everything else to the bowl.

4: Form into cakes, larger for entrée, smaller for appetizer.

5: Fry in a butter/olive oil mixture

6: Can serve with a sauce (homemade tartar or something else. They are also great sauceless.)
