Zucchini Bread

3 eggs

2 C sugar

1 C oil

2 C grated zucchini

3 tsp. vanilla

3 C flour

1 tsp. salt

1 tsp. baking soda

1/4 tsp. baking powder

3 tsp. cinnamon

Beat eggs and sugar. Add oil, zucchini and vanilla. Add dry ingredients. Bake in 2 greased bread pans at 350 for 1 hour or until done (test with toothpick).
