Potato Latkes

5 lbs. potatoes, peeled

1 lb. onions, peeled

4 eggs

2 cup matzo meal (or more, as needed; Betsy says use a bunch more)

salt and pepper to taste

oil for frying


Grate potatoes into a large bowl and onions into another bowl. Let potatoes sit for 20 minutes and drain off liquid. Drain liquid from onions, too. Stir in remaining ingredients, except oil. Mixture should be fairly thick. Heat oil over moderately high heat. Spoon batter into hot oil to make pancakes about 2"-3" in diameter. Fry until brown on bottom, flip and fry till the other side is brown. Drain on paper towels.

This recipe feeds 10-12 people.
