Dressing - Whisk all this stuff together in a large bowl:

1/3 cup Lemon Juice (2 small/med lemons)

1/2 cup EVOO

1 1/2 tsp Sea Salt

3 Tbsp Red Wine Vinegar

1/4 tsp Paprika

1/4 tsp Cumin

Black pepper

dash (up to 1/4 tsp) Cayenne Pepper


Solid Ingredients - Add to the whisked dressing:

1 clove garlic

1/4 red onion and/or 1/2 cup green onion (I generally use the green onion)

2/3 cucumber

1 can chickpeas

1/2 bunch flat leaf parsley (pull just the leaves and mince)

1/4 cup (or more) mint minced

3 medium tomatoes, juice and all.

1 cup cracked wheat (ADD once you've stirred everything)


Let set overnight so that cracked wheat can absorb liquids and grow!
