Turos Delkli (Hungarian Cheese Buns)

Makes about 50

For the Dough

½ lb. butter

3 T sugar

4 egg yolks

1 pkg. dry active yeast

2 T lukewarm water

½ cup milk

½ tsp. salt

3 cups flour (approximately)

Beat butter with sugar until light and fluffy. Beat in 4 yolks, one at a time, very well. Dissolve yeast in water and stir into the creamed mixture with ½ cup milk, salt and enough flour to make a soft dough that will leave the sides of the bowl clean. Divide dough in two and wrap in waxed paper. Refrigerate at least 2 hours, and preferably 4-5 hours. Remove dough from refrigerator 15 minutes before proceeding.

For the Filling, blend together:

1 lb. farmer cheese

8 oz. cream cheese

2 egg yolks

1/8 tsp. salt

½ cup sugar

1 tsp. vanilla


For Sprinkling

1 tsp. cinnamon

½ cup sugar

some milk

For Topping

beaten egg white

To Prepare the Turos Delkli:

Roll dough about ¼ inch thick on lightly floured board. Cut into 3-inch squares. Brush squares with milk and sprinkle with cinnamon and sugar mixture.

Place rounded tablespoon of cheese mixture in center of each square. Draw 4 corners together. Place on greased baking sheet. Brush with beaten egg white and bake for 25 minutes at 350.
