Hawaiian Chicken

1/3 cup oil

1/3 cup water

1/3 cup lemon juice

1/4 cup soy sauce (use gluten free soy sauce to make this recipe gluten free)

1 tsp. oregano

1 clove garlic, minced

1 chicken, cut up OR about 3 lbs. boneless chicken breast and/or thigh pieces

Marinate chicken overnight or 4-5 hours in marinade.

For cut up chicken: Bake in 350 oven until tender (1 to 1-1/2 hours) and baste every 15 to 20 minutes. Or cook on grill.

For boneless chicken: cook on grill

Passover Version: substitute 1/4 cup red wine for soy sauce. Add 1/2 tsp. salt and 9 twists of fresh black pepper. Use three cloves garlic. Cook 1 to 1-1/2 hours at 350 and baste every 20 minutes.
