Chinese Turkey Dumplings

Source: David Pistrang

1-1/3 pounds ground turkey

1 large bunch of scallions, finely chopped

2 T soy sauce

1-1/2 T sesame oil

1-1/2 T corn starch

1 egg

2 T pressed garlic (about 6 cloves)

2 T fresh ginger (finely chopped)

1 Package round dumpling wrappers (or use home-made wrappers)

Mix ground turkey, scallions, soy sauce, sesame oil, garlic and ginger. Add egg and corn starch and mix well. Fill the wrappers to make the dumplings. Drop dumplings in boiling water and make sure they don’t stick to the bottom of the pot. Wait for the water to return to a boil again, and once the dumplings float on top they are done. Total cooking time should be between 5 and 8 minutes. Make sure the filling is cooked, but try not to overcook the dumplings.

Serve dumplings with dipping sauce (vinegar, soy, sugar, garlic, drop of sesame oil)
