Mu-Shu Vegetables (with or without meat)

3 dried Shitake or other Chinese mushrooms, soaked and chopped
2 cloves garlic, minced
2-3 tsp. minced ginger
1 large onion, sliced very thin
1/2 cabbage, finely shredded
1 small carrot, shredded
3-4 scallions cut in 2" pieces
2 T soy sauce
1 T hoisin sauce (or more to taste)
1/2 pound thinly sliced chicken, beef, or pork (optional)
Saute onion and garlic, add other veggies. Stir fry till cabbage wilts. Add scallion, soy sauce, hoisin sauce.
If using meat (chicken, beef, or pork), marinate the meat in a little cornstarch and wine and precook separately in hot oil before adding to the vegetable mixture.
