Peppermint Meringues

Preheat oven to 300.

4 egg whites

1/4 tsp cream of tartar

1-1/2 cups sugar

1/4 tsp salt

1/2 tsp peppermint extract

12 oz mini chocolate chips

few drops of read food coloring (optional)

Beat egg whites with salt and carem of tartar until soft peaks form. Add sugar very gradually, beating until stiff peaks form and sugar is mostly dissolved. Add peppermint and fod coloring. Fold in chocolate chips. Drop by rounded teaspoonful (or small scoop) onto parchment lined baking sheet. Bake 25 minutes and remove from pan immediately to cooling rack.
