Oven BBQ Ribs

Sources: Version 1  by Mike Pistrang and Version 2 by Howie Mezer

Mike's Version:

1 rack of baby back ribs

kosher salt

fresh ground pepper

BBQ Sauce

Aluminum foil

Preheat oven to 400˚. On a long sheet of aluminum foil, place the ribs meat-side up (concave down), and salt and pepper liberally. Flip over the ribs (concave up) and salt and pepper the other side. Using a second long piece of foil, wrap the ribs into a tight package to keep in moisture. Place the ribs fat-side up (concave up) in the middle of the oven and cook for 1 hour ( It may be good to put a baking sheet on the bottom rack in the oven to catch any juices that might drip). Remove ribs from the oven, open package, and lather both sides liberally with BBQ sauce. Leaving the ribs uncovered, place back in the oven meat-side up (concave down), and cook for another 20 minutes.  Enjoy with more BBQ sauce!

Howie's Version:

1 rack of baby back ribs

salt, pepper, garlic powder

BBQ Sauce

Heavy-duty Aluminum foil

Strip membrane, if any, from the underside of ribs.

Preheat oven to 260. Cover a baking pan completely with heavy-duty foil. Season ribs with salt, pepper, and garlic powder. Place ribs bone-side down in the pan and add water to about 1/4 inch. Cover pan tightly with heavy-duty foil. Bakte at 260 about 3-1/2 hours in the middle of the oven. Transfer ribs to broiler pan and sauce them generously with bbq sauce. Broil for a few minutes. Serve with extra sauce. Bone Sucking Sauce is a particularly good bbq sauce.
