Zesty Baked Chicken

1 cut up chicken, about 3-1/2 or 4 lbs

1 cup seasoned bread crumbs (use gluten free breadcrumbes to make this recipe gluten free)

1/3 cup parmesan cheese

1/4 cup parsley (or lots of parsley flakes)

1/4 tsp pepper

3/4 to 1 stick margarine, melted (use nonfat yogurt instead of margarine to reduce the fat content of this recipe)

1 large clove garlic


Squeeze one clove of garlic into the melted margarine. Combine bread crumbs, cheese, parsley and pepper. Dip chicken pieces in margarine mixture, then in bread crumb mixture. Bake at 350 for 1-1/4 hours.
