Green Beans with Ginger Butter

2 pounds green beans, trimmed
2 tsp. minced ginger
3 T butter
finely grated lemon zest (yellow part of peel) from ½ lemon
½ tsp. salt
Fill a large bowl with cold water and ice. Set aside.
Bring salted water to a boil. Cook the beans, uncovered, until just tender, about 5-8 minutes. Drain beans in a colander, then transfer to the ice water to cool. Drain beans again and pat dry.
Heat the butter in a skillet until melted. Add ginger and cook, stirring, until golden, about 3 minutes. Add the beans and cook, stirring, until just heated through, about 2 minutes. Remove the pan from the heat and add the lemon zest and ½ tsp. salt, stirring to combine.
