Barbara's Blond Chili

1 lb. lean ground turkey or chicken

1 large onion, diced small

2 tsp. oil

1/2 large green pepper, diced small (optional)

3 stalks celery, diced small

2 cloves garlic, minced

2 cans whole tomatoes (drained) (15.5 oz cans)

3 cans Progresso white or red kidney beans with liquid (19 oz cans)

1/2 cup red wine

1 bay leaf

1 t. oregano

1 t. cumin

4 T chili powder (or to taste; this amount is very generous)

1/2 t. cayenne

1/2 t. basil

salt and pepper to taste

Spray skillet with cooking spray. Brown turkey in skillet. Drain off any fat and remove meat from pan. Saute garlic and onion in 2 tsp. oil in same pan for a minute or two. Add turkey back in pan. Add everything else and simmer together in large pot for a least 1 hour.
