Shrimp and Broccoli

1 lb. shrimp, shelled and deveined

3 to 4 cups chopped broccoli

2 T oil

1 T minced fresh ginger

1 T minced garlic

1 C chicken broth

1/2 T fermented black beans (optional)

2 to 3 tsp soy sauce

1/3 tsp cayenne pepper

2 T corn starch

1 T minced scallions

Blanch broccoli in boiling water for 2-3 minutes, or use microwave. Drain.

Heat oil in wok, add ginger, garlic, black beans. Stir 1 minute. Add broth and cayenne pepper and bring to boil. Add shrimp, scallions and broccoli. Cover and simmer until shrimp are pink (about 3 minutes). Combine cornstarch and soy sauce and add to wok. Stir until blended. Serve with rice.
