Pork Lo Mein

1/2 lb. boneless pork, cut into match stick size

marinate for 30 minutes in

2 t cornstarch

1 t sugar

1 T light soy

1 t sherry


Veggies

2 T fresh ginger, cut in thin slivers


cut into thin strips:

4 dried mushrooms, soaked till soft

1/2 cup bamboo shoots

1 red bell pepper


1 small onion, cut in small wedges

2 scallions, cut in 1 inch lengths

1 medium zucchini ( or snow peas, or other veggies) cut small


Sauce for veggies

4 tsp cornstarch

1 cup chicken broth

2 T oyster sauce

2 cloves garlic, crushed

1 chunk ginger crushed, size of quarter


Heat 2 T oil. Stir fry all veggies 2-3 minutes, sprinkle with a little salt and 1 t sugar. Remove veggies and set aside. Add 2 T oil and stir fry pork. Add veggie sauce mixture, stir till thick - add veggies. Stir till well mixed. Keep warm.


Cook noodles, drain and mix with noodle sauce. Place veggies on top. Serve and eat.
