Betsy's Oatmeal Bread

2 pkg. active dry yeast

1/2 cup warm water

1-1/2 cups boiling water

1 cup quick rolled oats, uncooked

1/2 cup molasses or honey (or some of each)

1/2 cup shortening

1 T salt

5 to 5-1/2 cups flour

2 eggs, beaten


Soften yeast in warm water. Combine next five ingredients in a bowl. Cool to lukewarm. Beat in 2 cups flour. Beat in eggs and yeast.

Add enough flour to make a soft dough. Cover and refrigerate at least 2 hours.

Turn onto floured surface, form into two loaves.

Place in greased 9x5x3 pans. Let rise until doubled.

Bake at 375 for 40-45 minutes.
